2-Zone Heating Elements

PizzaMaster CounterTop ovens feature advanced 2-Zone Heating Elements, giving you total command over the oven deck heat. With independent electronic controls for the top and bottom zones, you can fine-tune the balance to create the perfect baking environment for any dish.

By precisely regulating these middle heating elements, heat is evenly distributed across the deck, ensuring consistent results and authentic textures. From pizzas to breads to roasted dishes, the 2-zone system delivers the flexibility, accuracy, and reliability that define every PizzaMaster oven.

Max Baking Temperature

PizzaMaster ovens deliver a Maximum Baking Temperature of 400°C (752°F) as standard, enabling a wide range of pizza styles and baked products. Direct stone baking is optimized up to 370°C (698°F), ensuring excellent crust quality. For operations requiring higher heat such as Neapolitan-style pizza, the XTREME Performance option increases the maximum temperature to 500°C (932°F).

Bake Timer with Manual Shut-Off Alarm

Each PizzaMaster oven deck is equipped with a dedicated Bake Timer with a Manual Shut-Off Alarm, designed to assist with precise timing for individual baking sessions. The timer allows second-by-second adjustments for customized durations and triggers a continuous, audible alarm when the set time elapses. The alarm must be manually shut off, ensuring the operator acknowledges the cycle completion, reducing the risk of overbaking or unattended product.

TurboStart

The TurboStart™ function is designed to significantly reduce the time required to bring the oven to an optimal baking temperature during the first start-up of the day. It temporarily bypasses user-defined power levels and operates at maximum output until it is nearing the setpoint. Each control display stores the previous day’s most-used temperature settings, ensuring targeted and efficient heat-up. Once the setpoint is nearly reached, Turbo Start disengages and transitions to the standard power profile to prevent temperature overshoot. Remarkably, this all happens in 25 minutes or less.

Ceramic Clay Stone w/ Crisping Function

PizzaMaster ovens are equipped with Ceramic Clay Hearthstones featuring a textured surface. This structural design enhances thermal transfer by increasing surface contact variation, allowing the stone to discharge stored heat into products rapidly and recharge quickly from the radiant heating elements. The result is superior crust development, rapid temperature recovery, and consistent bake performance. The standard hearthstones are optimized for baking up to 370°F (188°C). For higher-temperature applications, such as Neapolitan-style pizza, an optional artisan clay stone upgrade is available engineered specifically for performance above 370°F (188°C).

Stainless Steel Front

The front panel of all PizzaMaster ovens is constructed from high-grade stainless steel, chosen for its elegance, resistance to corrosion, staining, and thermal deformation. Its smooth, non-porous surface is designed for fast, hygienic cleaning and long-term durability in high-use environments. The Stainless Steel Front also integrates seamlessly with other commercial kitchen equipment. Dual Xenon Oven Deck Lights

Each PizzaMaster oven chamber is equipped with two integrated Xenon Deck Lights engineered for high thermal durability and visual clarity. These xenon lamps offer significantly longer service life than traditional halogen bulbs, reducing the need for frequent maintenance. Their flush-mount, anti-glare design ensures consistent lighting across the baking surface. This is crucial for accurate visual monitoring during loading, baking, and unloading cycles.

Large Clear Window Glass Oven Door

The Large Clear Glass Oven Door is designed for visibility and performance. The central viewing window is made from specially coated, heat-reflective glass that retains radiant heat while offering a clear, unobstructed view into the baking chamber. Artisan High-Temperature Clay Stones

Engineered for performance above 370°C (698°F), PizzaMaster’s optional Artisan High-Temperature Clay Stones are specially designed for chefs seeking true wood-fired results with electric oven consistency. These stones are made from a proprietary blend of Italian clay, slightly thicker and more textured than standard hearthstones. The added thickness naturally lowers the surface temperature, which helps prevent burning the bottom of the pizza, a common issue when baking at extreme heat.

Unlike standard hearthstones that retain and release heat aggressively, these artisan stones are intentionally calibrated to moderate heat transfer. The slightly smaller stone size also reduces thermal mass, ensuring a more balanced bake when oven temperatures soar. Though capacity is minimally impacted due to the stone configuration, it’s largely irrelevant when baking times are as short as 90 seconds. Many pizzerias designate one deck specifically for high-temperature pizzas, using Artisan Stones to achieve that fast, flame-like finish, without the open flame.

Steam System

PizzaMaster CounterTop ovens are built for precision and versatility, giving you the ability to bake much more than just pizza. For operators looking to expand into breads and pastries, select CounterTop models can be equipped with our patented Steam System. Unlike Modular ovens, this feature is only available on decks without a middle stone, ensuring proper performance and airflow.

The advanced steam package is engineered directly into the oven deck and connects seamlessly to your local water supply, automatically filling as needed. When activated from the control panel, the oven’s ambient heat converts the water into steam, which is released into the cavity at the touch of a button—delivering the moisture and crust quality needed for authentic, old-world style baking.

Dual Voltage System

PizzaMaster ovens with the Dual Voltage System are factory-configured to operate on either 230V 3-phase or 400V 3-phase + neutral power supplies, making them ideal for international or multi-site operations where electrical infrastructure varies.
